How to grill beef steaks over charcoal? Which part of the carcass is best to use for this? Premium steaks are ideal for cooking. They are made from that part of the carcass that is cut from the back of a bull. There, the muscles are less involved in the movement of the animal, which means the meat is tender and soft. Premium steaks do not require intensive marinating; it is enough to soak the beef in a mixture of peppers, seasonings and oil to highlight the amazing taste.

Prepare the steaks in advance, remove them from the vacuum packaging, dry them with paper towels, wrap them in parchment and place them in the refrigerator for two to three days. Aged meat becomes juicier and softer.

You can salt the beef at the stage before putting it in the refrigerator, or you can skip this step and add salt after the steaks are ready. I usually salt already cooked steaks.

Prepare everything you need for the marinade. Rinse bell peppers and chili peppers. Remove seeds and stems. Chili can be omitted from the list of ingredients if you donʼt like it spicy. Cut the peppers into small pieces, this will make it easier to grind them in a blender.

Place unscented olive or vegetable oil into a blender bowl. Add peppers, including peas.
