How to fry steak on a grill pan? Prepare your food. Remove the meat steaks from the refrigerator in advance so that they have time to warm to room temperature. For this recipe, it is better to use fresh meat rather than frozen, otherwise the finished meat risks turning out dry. The thickness of the steak should be 2-4 cm and have a little fat layer.

In a separate bowl, mix cognac, soy sauce, salt and spices for the marinade.

Coat the meat on all sides with marinade and leave to marinate for 1-2 hours.

Then pat the meat well with paper towels to remove all excess liquid from the surface. It is important to do this as carefully as possible; excess liquid will prevent the meat from frying; instead, it will begin to cook.

Coat the meat on both sides with vegetable oil.

Prepare the grill pan. Heat it until hot and, using a silicone brush, lubricate the entire surface with vegetable oil.

Place the steaks in the hot pan so that they are not touching each other. Let them fry for a minute over high heat.

Then use tongs to turn them over and fry the other side for a minute to form a crust. Then reduce the heat and fry for another 2 minutes on each side.

Then turn off the heat and remove the meat from the pan. Wrap it in foil or cover with a lid. Let the meat rest for about 5 minutes. During this time, the juice will be distributed inside the entire piece, the temperature outside and inside will equalize, and the entire steak will become warm, juicy and tender.
