Basic:

Onion (2-3 pcs. large size) 500 g
Salt to taste
Ground black pepper to taste
White wine vinegar (or red, 3-5 tbsp. taste) 3 tbsp
Ground red pepper to taste
Pork loin (pork belly or brisket on the bone) 2 kg

How to fry juicy pork on the grill? Prepare all products according to the list. Brisket or brisket on the bone is perfect for this recipe. You can use any spices to suit your taste. The meat will be juicier if you use fresh pork that has not been frozen. If you have frozen pork, you need to defrost it first. How to do this correctly, read the article at the link at the end of the recipe. Rinse the meat and dry with paper towels.

Cut the meat into portions at least 1.5-2 cm thick.

Salt and pepper the meat on all sides. Add your favorite seasonings.

Peel the onion, rinse and cut into half rings or rings. Lightly salt the onion rings and sprinkle with wine vinegar. You can use a little more vinegar to taste than indicated in the recipe. Mix everything well, crushing the onion with your hands to release the juice.

Place the pickled onions in the bowl with the meat.

Mix everything. Cover with a lid or cling film and leave to marinate in the refrigerator for 1-2 hours.

Separate the marinated loin from the onion. You can cook pork steak on the grill on a grill or on skewers. I chose the second option. To prevent the pieces from turning during cooking, string them along the skewer, as in the photo. I used two skewers per serving of meat.

Fry the meat over the coals, turning occasionally, until cooked through. How long does it take to grill pork? It took me about 20-25 minutes. The exact time depends on the size of the pieces of meat and the heat of the coals.
