Cheesy Megrelian Khachapuri with Yeast

Basic:

Salt 1 tsp
Sugar 1 tbsp
Wheat flour (You may need a little more depending on the flour.) 350 g
Water (boiled, warm) 250 ml
Eggs 1 pc
Vegetable oil 40 ml
Dry yeast 0.5 tsp
Suluguni 400 g

Prepare the dough ingredients indicated in the recipe. Heat filtered water. It should be warm (no higher than 40 degrees), and not scalding hot or cold, otherwise the yeast will die or not be activated.

Be sure to sift the flour to enrich it with oxygen. Then the baked goods will turn out fluffy and airy. Add instant yeast to the flour. Just in case, sift more flour than indicated. We will need it to roll out the dough. You may also have to add it to the dough itself to achieve the desired elastic consistency.

Pour warm boiled water into the flour, stirring the mixture. Add salt and sugar. Knead into a sticky dough. When it sets a little, pour in refined vegetable oil.

Continue kneading the dough. If it turns out watery and sticky, add as much flour as necessary to achieve the desired consistency. The khachapuri dough should be elastic, soft, smooth, flexible and not sticky to your hands. Cover the bowl with the dough with a kitchen towel. Place in a warm, draft-free place to proof. Leave for 1.5 hours.

During this time, the yeast will actively work and the dough will increase in volume by 1.5-2 times.

While the dough is resting, prepare the filling. Grate the suluguni cheese on a coarse grater or grind through a meat grinder, whichever is more convenient for you.

Sprinkle your work surface with flour. Place the dough on it. Knead it again to expel the carbon dioxide that is preventing the yeast from working. If desired, divide the dough into two parts to bake two khachapuris, but this is not necessary. I made one big one. Stretch the dough with your hands (or roll it out with a rolling pin) into a round layer about 5 mm thick.

At this point, turn on the oven to preheat (10-15 minutes before baking). Set the temperature to 190 degrees. Since everyoneʼs oven bakes differently, keep this in mind. Place 2/3 of the grated cheese in the middle of the round cake.

Gather the edges of the dough towards the center and seal them.

Carefully turn the workpiece over, seam side down. Roll it out with a rolling pin or flatten it with your hands into a circle with a diameter of about 20-22 cm and a thickness of about 8-10 mm.

Make a hole in the center with your finger or 2-3 small cuts with the tip of a knife (or pierce the workpiece around the perimeter with a toothpick). This is necessary so that during baking the steam generated has an outlet and the khachapuri does not swell.

Line a baking sheet with parchment paper. Lightly grease it with vegetable oil so that the product does not stick to the bottom of the mold. Carefully transfer the workpiece to a baking sheet. Break the egg into a separate small container. Shake it a little with a fork. Brush the surface of the khachapuri with a silicone brush. Thanks to the egg wash, the baked goods will acquire a beautiful golden color.

Sprinkle the remaining grated cheese on top of the product. Place the baking sheet with khachapuri into the preheated oven. Bake for approximately 20 minutes. Please note that the baking time in your oven may vary. How to check the doneness of baked goods? When you see that a golden brown crust has formed on top, pierce it with a wooden toothpick. If it comes out dry, itʼs ready.

Remove Megrelian khachapuri from the oven. Can be served both hot and cold. In my opinion, piping hot baked goods will taste much better.
