Recipe instructions

Step 1

Step 1
How to make Banoffee Pie at home? To begin, prepare the necessary ingredients according to the list. It’s better to start cooking with the base. Biscuit or sugar cookies are suitable for the base. It’s better to take salted straws, so the taste will be more interesting. You can replace the straws with the same amount of cookies.

Step 2

Step 2
Melt the butter first and cool it.

Step 3

Step 3
Place the broken cookies into the blender bowl. Grind into fine crumbs.

Step 4

Step 4
Place the straws into the blender bowl and grind into crumbs. The crumbs can be as small as the cookies, or you can make them a little larger.

Step 5

Step 5
Place both types of crumbs into a bowl. Pour in the melted butter and stir until combined into moist crumbs.

Step 6

Step 6
Pour the crumbs into a baking dish (Ø 16-18 cm). It is better to first line the sides of the mold with acetate film (so that the film fits tightly to the sides, grease them with vegetable oil).

Step 7

Step 7
Distribute the crumbs over the bottom and sides of the mold, forming high sides about 5-6 mm thick. Place the mold in the refrigerator for 1-2 hours. It is better to form the cake immediately on a plate.

Step 8

Step 8
Now prepare the caramel. You can use cane sugar, like mine, or regular white sugar.

Step 9

Step 9
Pour sugar into a saucepan, pour in water. Place the saucepan over medium heat and cook until the sugar melts. Do not stir the sugar mixture with anything, otherwise the sugar will crystallize! Just shake the saucepan. Once the sugar has melted, increase the heat to high and wait until the mixture turns amber and thickens.

Step 10

Step 10
Remove the saucepan from the heat, add the butter and warm cream and stir vigorously until smooth. The caramel should be quite thick. If you wish, you can add a pinch of salt to the caramel during cooking. You will get salted caramel. What should I do if, after adding butter and cream, the caramel has become very liquefied? You can put it on low heat and, stirring constantly, bring it to a boil again. Cook, stirring, until thickened.

Step 11

Step 11
Pour caramel sauce over crust. You can cool it slightly before doing this.

Step 12

Step 12
For the filling you will need 2-3 bananas. Take bananas that are ripe, but not overripe, with bright yellow skin without black spots.

Step 13

Step 13
Peel the bananas and cut into not very thick slices.

Step 14

Step 14
Place banana slices on caramel in 2-3 layers.

Step 15

Step 15
Now prepare the cream. For the cream, regular cottage cheese without additives (Almette, mascarpone, Hochland, etc.) is suitable. If you wish, you can add a little powdered sugar to the cream.

Step 16

Step 16
Beat cold cream with a mixer until stiff peaks form.

Step 17

Step 17
Add cream cheese and beat again until smooth. There is no need to beat for a long time, otherwise the cheese and cream will separate.

Step 18

Step 18
Place the cream into a piping bag fitted with a star tip.

Step 19

Step 19
Pipe large roses of cream onto the banana layer. Place the banoffee pie in the refrigerator for 1 hour.

Step 20

Step 20
Before serving, remove the cooking ring and decorate the cake with banana slices and mint. Bon appetit!
