Basic:

Wheat flour 1 cup
Water 0.75 cup
Eggs 2 pc
Soda 1 tsp
Sugar 1 tbsp
Salt to taste

For frying:

Vegetable oil 2 tbsp

How to make water pancakes with eggs? Prepare your food. Take warm water — then lumps will not form when kneading. Remove the eggs from the refrigerator in advance or warm them in warm water.

Sift the flour into a deep bowl for dough. By doing this you will not only remove possible debris, but also saturate it with oxygen, which will make the pancakes more fluffy. Add sugar and salt to flour. Adjust their quantity to your liking. The original recipe called for 2 tablespoons of sugar, but I reduced it. Mix flour with sugar and salt.

Beat the eggs into a separate bowl. Shake them with a fork until smooth. Pour water into the eggs and stir.

Begin pouring the egg mixture into the flour in portions, stirring constantly with a fork or whisk. Thanks to this method (pour the liquid component into the dry) the dough will be more homogeneous. The consistency should be quite thick, like sour cream.

Put out the soda. How to extinguish soda? Pour it into a small container and pour in the same amount of table vinegar (9%) or lemon juice. The reaction will begin immediately — the mass will bubble. As a result, carbon dioxide will be released, which will raise the dough during baking. The soda in this recipe is quenched because it contains only water; if the pancakes were made with kefir, it would be quenched by the acid contained in the fermented milk drink.

Add slaked soda to the dough, mix.

Heat the frying pan well over high heat. Pour some vegetable oil on it. Spoon the dough into round pancakes. Fry them until golden brown on one side, then turn them over and cook them on the other. Adjust the heat so that the pancakes brown but do not burn. Remove the finished pancakes to a plate.
