Heavy cream 400 g
Cottage cheese 400 g

How to make a honey cake with cheese cream? To prepare the honey dough, take a large saucepan and combine eggs, sugar and honey in it. Mix everything well. Then add butter and put on fire. While stirring constantly, bring the mixture to a boil and immediately remove from heat.

Immediately add baking soda and stir. The mass will begin to foam and increase in volume. Now leave this mass to cool to room temperature.

Sift the dough flour through a sieve. Then pour it into the honey mixture and knead the dough. There is no need to add excess flour, otherwise the dough will become denser and heavier. It will stick to your hands a little. Thatʼs how it should be. Place the dough in a bag and refrigerate for 1-2 hours. During this time, it will rest and stop sticking to your hands.

Roll out the rested dough to about 0.3-0.4 cm thick and cut out figures from it according to the size of the cakes you want to get. I will have round cakes. Prick them a little with a fork to prevent them from puffing up during baking. It is most convenient to roll it out immediately on baking paper, so that you can then transfer the workpieces along with it to a baking sheet. Place the baking sheet in the oven, preheated to 180 degrees, for a few minutes. Cool the finished products.

To prepare the cream, combine cream with a fat content of at least 33% with powdered sugar. Turn the mixer on low speed to dissolve the powder. Then turn on maximum speed and beat until creamy. Then add cream cheese and mix it into the cream.

Using a pastry bag, pipe the cream onto half of the pieces.

Then cover with the other halves and place the cream on top in the same way. Place the pies in a box so they are covered and put them in the refrigerator for a few hours. This is necessary so that the moisture from the cream does not escape into the air, but saturates the honey cakes.
