Crispy Zucchini Pancakes with Egg

How to fry zucchini pancakes in a frying pan with an egg? Prepare your food. I prepared one serving, it came out just from one zucchini and one egg. It may take more or less flour than indicated in the recipe, it will depend on the juiciness of the vegetable.

Wash and dry the zucchini. What kind of zucchini works best? Choose young fruits with delicate skin and small seeds. If using more mature squash, trim off the rough skin and scoop out the seeded center. Cut off the ends of the zucchini. Grate it on a coarse grater.

Salt the grated zucchini mass and leave to stand for 5 minutes. Due to the salt, liquid will be released from the zucchini; it must be drained. To do this, squeeze the zucchini, using a sieve, a towel, or just with your hands. Drain off the released juice — the mass should become dry.

Rinse the greens and dry with paper towels. Chop it finely. I used dill, parsley works well.

Beat an egg into the zucchini mixture, add chopped herbs and a little flour (about half of the total amount).
