Easy No-Bake Tiramisu with Mascarpone

How to make tiramisu with eggs and mascarpone? Prepare your food. You can bake Savoyardi cookies yourself; a simple and affordable recipe is available on our website. Take the freshest eggs, as they will not be heat treated. Choose high-quality mascarpone, the taste of the entire dessert will depend on it. It is better to take mascarpone with a fat content of 80% or more, homogeneous, without grains or exfoliated liquid. The composition should not contain artificial additives.

Wash the eggs very well and dry them. Donʼt skip this step as they are used raw. Separate the eggs into whites and yolks. Do this very carefully; even a small amount of yolk will prevent the whites from whipping. I specifically use a glass to separate the whites one at a time. In case of failure, the entire mass of proteins will not spoil.

Pour sugar into the yolks. You can reduce its amount to your liking. Beat the yolks with sugar with a mixer until fluffy and light.

Add mascarpone to the yolks and stir in with a hand whisk. You should get a fairly thick, homogeneous mass. If the mass turns out to be runny, then in step 6 add the whites carefully in small portions, paying attention to the consistency. You may only need some of the beaten egg whites.

Pour a pinch of salt into the whites — it will help the whites whip faster. Beat the whites with a mixer until stiff peaks form.

Add the whipped whites to the cheese mixture in small portions, stirring gently with a whisk. If the cream starts to get too runny, you can stop and not add all the whites. I used about 3 egg whites.

Take a deep shape, square or rectangular. Pour the coffee into a plate with sides. You can use both boiled and instant coffee. It must be strong. You can add alcohol to it — cognac, rum or liqueur. I cook without it, since the children will eat the dessert. Dip the cookie sticks into the coffee for a second — it will get soggy very quickly. Place the cookies in one layer in the mold, where a whole stick does not fit, break it.

Spread half of the cream onto the cookies in an even layer.

Next, lay out the second half of the cookies. Try to place the sticks in the same order as on the bottom, then the cut of the dessert will be nice and even.

Spread the remaining cream on top. Place the tiramisu in the refrigerator for a couple of hours to soak.
