Melt-in-Your-Mouth Tatar Sweet Treat: Chuck Chuck

Traditional Tatar sweets! The taste is incomparable! The ingredients are given for one dish measuring 24-26 cm. Chuck chuck, melting in your mouth, can easily stand for 1-2 weeks in the cupboard without spoiling at all, just don’t forget to cover it with cling film.

Basic:

Salt 0.3 tsp
Sugar 1 cup
Wheat flour 400 g
Eggs 4 pc
Honey 1 cup
Vegetable oil 1 l
Soda 0.5 tsp
Almond (almonds or walnuts for decoration as needed) 20 g

How to make Chuck-Chuck melt in your mouth? Pour flour onto a work surface, make a well in it, and gradually pour in the eggs, beaten with salt and soda, kneading the dough. The dough should not be sticky or soft. Place the kneaded dough in a bag for 15-20 minutes.

Divide the dough into 2 parts and roll out each part thinly on a floured board. Place the rolled sheets aside so that they dry a little (10-15 minutes, and so that the draft does not fall on them). But donʼt overdry it. Otherwise, it will be difficult to cut later and the dough will be brittle.

Cut the rolled sheets into strips 5 cm wide. Fold the strips in half, and place three strips on top of each other, sprinkling a little flour between them (so that they do not stick together)

Cut thin noodles from strips and scatter them on the table. Heat vegetable oil in a cauldron, and in small batches (about a handful), quickly (over medium heat), fry the noodles. Fry for literally 1-2 minutes, stirring a couple of times. As soon as the “noodles” turn golden, immediately take them out with a slotted spoon and place them in a cup on a paper kitchen napkin so that it absorbs all the excess fat. Do not overcook the noodles; they should be light golden brown.

After frying the noodles, letʼs make the syrup. Prepare the syrup in another dry cauldron, or any other thick-walled container. Pour 1 tbsp into the cauldron. honey and 1 tbsp. sugar, heat, bring to a boil, stirring constantly, let simmer for three minutes, turn off the heat. Using a slotted spoon, dip the almonds into the hot honey and remove them into a separate bowl; we will need the almonds for decorating the chak-chak.

Remove paper napkins from the cup of fried noodles, pour hot honey syrup over the noodles, and carefully mix first with two wooden or silicone spatulas, then with hands moistened with cold water. Mix carefully so as not to break or mash the “noodles”. Donʼt get burned, the syrup is hot!

Sprinkle cold water on the plate on which you will place the chak-chak. And quickly, before the syrup has cooled, put the chak-chak on a plate, forming a slide. It’s important to do everything quickly here, otherwise, if the syrup cools down, nothing will stick together. When you form the slide, do not press it too hard.

Decorate immediately with honey almonds. You can decorate with walnuts, raisins, multi-colored candies (like “pebbles”), some multi-colored sprinkles, there is a complete flight of imagination and a matter of taste. We put the finished chak-chak in the closet and let it stand until the next day so that it sets well.
