How to make delicious crispy fried khachapuri from pita bread with cottage cheese and cheese in a frying pan? Very simple and fast! To begin, prepare the necessary ingredients according to the list. You can choose the type of cheese to suit your taste. For example, replace regular cheese with mozzarella, suluguni or feta cheese. Instead of Armenian lavash, you can also use wheat roll. It’s best to start cooking with the filling. Place the cottage cheese in a bowl and mash with a fork. Any cottage cheese will do for the filling. Grate the cheese on a coarse grater. I have regular Russian cheese.

Cut the pita bread into strips 7-8 cm wide. I got 8 strips about 40 cm long. The pita bread dries very quickly, so the strips need to be cut last, when the filling is already prepared. Before this, it is better to store the pita bread in a hermetically sealed bag. Place a little filling on the edge of each strip.

Roll the pita strips into triangles. In this case, all edges should be wrapped in pita bread, then the filling will not leak out of the envelope.

Brush the edges of the pita bread with beaten egg and form into triangles.
