Ingredients (6 portions)

For dough:

Salt 0.5 tsp
Wheat flour 450 g
Water 200 ml
Eggs 1 pc
Vegetable oil 1 tbsp
Vinegar 1 tbsp

For filling:

Onion 1 pc
Salt to taste
Pepper to taste
Hard cheese 100 g
Vegetable oil 75 ml
Minced meat 400 g

How to fry tortillas with meat in a frying pan? Prepare all the necessary ingredients. Sift the flour through a sieve. This way it will be saturated with oxygen, and the finished cakes will turn out more tender. Minced meat can be used either purchased or homemade. Minced meat can be made from any meat.

First, take the test. Heat the water to approximately 30 degrees, as for sponge. Beat an egg into a bowl, add salt, vinegar and heated water. Whisk all ingredients.

Start adding sifted flour in parts, kneading a soft dough. Depending on the quality of flour, you may need a little more or a little less. You can read more about flour and its properties in a separate article, link at the end of the recipe.

Pour in the vegetable oil and knead the dough a little more with your hands. Cover the bowl with the dough with cling film and leave for 15-20 minutes. During this time, gluten will develop in the flour, and the dough will become more elastic and pliable.

Prepare the meat filling. Peel the onion, rinse and cut into several pieces. Grind the finished minced meat together with the onion through a meat grinder. Add ground black pepper and salt to taste. You can also add your favorite spices. Grate the hard cheese on a coarse grater and also add to the minced meat. Mix all ingredients thoroughly.

Knead the dough again. After the second kneading it should become very elastic and smooth. Divide the dough into an even number of pieces, as you will need two pieces per cake. Take the first piece of dough, roll it into a thin flat cake, put the meat filling on it and spread it over the entire surface, slightly short of the edges.

Cover the top with a second thinly rolled flatbread and seal the edges tightly, releasing the air. If the edges turn out to be very thick and sloppy, then they can be carefully trimmed.

Fry the finished flatbread on both sides in a small amount of vegetable oil until an appetizing golden crust forms.
