Fresh yeast 50 g
Butter 250 g
Salt 1 tsp
Sugar 2 tbsp
Milk 200 ml
Wheat flour 4 cup

Mackerel 800 g

How to bake mackerel in yeast dough in the oven? Prepare all the necessary ingredients. Remove the butter from the refrigerator in advance; it should become soft. Heat the milk until warm. It should be pleasantly warm, but not scalding, otherwise the yeast in it will die. Sift the flour in advance to saturate it with oxygen, which will make the dough more fluffy. Pour warm milk over the yeast and add softened butter. Mix everything.

Then start adding flour. Do not pour out all 4 glasses at once. You may need 3.5. It turns out differently for me every time. Check the consistency of the dough. It should be soft, but not stick to your hands.

Knead the dough and gather it into a ball. Place the finished dough in the refrigerator for about 1-1.5 hours. During this time it will rise.

Start preparing the fish. Cut off the head, tail, fins, and remove the entrails. Rinse the fish well. Cut the mackerel into pieces 2-3 cm wide. Season with salt. You can sprinkle the fish with your favorite seasoning. Leave the fish to marinate for 1-1.5 hours.

Once the dough has risen, divide it into an even amount. I got 10. Mash each piece with your hands into these flat cakes. Turn on the oven at 220 degrees.

Grease half of the flatbreads with vegetable oil and place pieces of fish on them (I laid out 2 pieces each). It is advisable that the oil does not get on the edges, otherwise the dough will not stick well.

Cover the top of the fish with a tortilla and seal the edges. Also form the rest of the blanks.

After you remove the pies from the oven, brush them with butter and cover with a towel. This will make the top softer. After 15 minutes you can serve them to the table. Cut the pie with a knife at the junction of the two halves. Open them and enjoy the delicious aromatic fish. Bon appetit!
