Curd Stollen: Irresistible German Holiday Pastry

These fragrant German New Yearʼs pastries will win your heart! Stollen is a traditional German Christmas pastry. Stollen are baked in advance, a month before Christmas, and during this time they infuse and ripen. Raisins, candied fruits, nuts, poppy seeds and marzipan are added to stollen as fillers. In addition to curd stollen, stollen is prepared using a very rich yeast dough (I am also going to try that :)).

Ingredients (12 portions)

Basic:

Sugar 200 g
Wheat flour 500 g
Butter (175 g — for dough and 25 g — for greasing after baking) 200 g
Eggs 2 pc
Raisin (or candied fruits) 250 g
Baking powder (1 package) 15 g
Powdered sugar (for sprinkling) 50 g
Cottage cheese 250 g
Vanilla sugar (or vanilla tincture 1 tsp.) 10 g
Almond (peeled) 150 g
Rum (or cognac) 30 ml

It is better to start preparing stollen in the evening. Pour rum or cognac over raisins and chopped nuts (I also added a teaspoon of vanilla tincture) and leave to steep overnight. If you don’t have time, you can leave it for 2 hours.

For the dough, sift the flour with baking powder, add sugar, vanilla sugar (if you use it)

and eggs, mix everything well.

Add soft butter and cottage cheese,

using a mixer, knead the dough (it turns out thick).

Add infused dried fruits and nuts

There are special triangular shapes for stollen, but I don’t have one, so I baked it in bread pans. Grease the molds with oil and sprinkle with flour. Lay out the dough.

Bake in an oven preheated to 180C for about 1 hour. We check readiness by poking it with a skewer :) For the first half hour, it is better to cover the pan with foil on top so that the stollen does not brown too much, and after half an hour remove the foil and bake until done.
