Traditional Scottish Dundee Christmas Cake

A fragrant, tender cake from Scotland, try it too! Dundee Christmas cake is a traditional Scottish Christmas cake. I add a lot of dried fruits and candied fruits to this cupcake, which you can choose to suit your taste. It, just like the German Stollen, only becomes tastier over time. After baking, the cake is allowed to cool completely, wrapped in foil or film and left in a cool place for 2 weeks to several months. Ingredients (8 portions)

Basic:

Sugar 200 g
Lemon zest 1 tsp
Lemon juice 3 tbsp
Wheat flour 250 g
Butter 200 g
Raisin (100 g light, 100 g dark) 200 g
Baking powder 0.5 tsp
Chicken eggs 4 pc
Candied fruit (pineapple) 100 g
Cranberry (dried) 100 g
Almond (50 g for the dough, 100 g for decorating the top of the cupcake) 150 g
Cognac 50 ml
Vanilla extract 1 tsp

Recipe instructions

Products for kneading dough. We will also need dried fruits (you can choose according to your taste, you can increase the amount of dried fruits).

2 types of raisins, pineapples, cranberries. Wash the dried fruits, dry them on paper towels, soak them in cognac + vanilla tincture, and leave for 2 hours.

Peel the zest from the lemon and squeeze out 3 tbsp. l. juice Grind 50 g almonds into flour.

Cream butter at room temperature with sugar (add sugar in small portions).

Add 4 eggs to the oil one at a time, beating thoroughly after each.

Add lemon zest and juice, ground almonds. Mix.

Sift the flour with baking powder and add it in parts to the butter mixture, stir until smooth.

Add dried fruits. Mix gently, distributing the dried fruits over the dough.

Pour the mixture into the prepared pan and level it out.

Place peeled almonds on top in a circle (almonds are very easy to peel if you soak them in boiling water for a few minutes). And bake in a preheated oven at 160C for about 1.20 — 1.30 hours. Since the dough is quite heavy and takes a long time to bake, we check the readiness with a skewer (it should be without traces of sticky dough).
