Ingredients (8 portions)

Basic:

Sugar 1 tsp
Mozzarella (the one for pizza) 200 g
Wheat flour 300 g
Salt 3 g
Vegetable oil 2 tbsp
Baking powder 8 g
Ham (boiled-smoked ham, smoked sausage, smoked something else — your choice. The point is that I have an assortment of it, and not just one type.) 200 g
Chicken eggs 2 pc
Kefir (1%) 300 ml
Thyme, thyme (2 branches) 2 g
Dried tomatoes (dried) 70 g

1. Grate the cheese on a coarse grater. (Set aside a small amount of grated cheese; you will need it to sprinkle the top of the cupcake)

2. Wash the thyme, dry it, separate the leaves from the stem. Cut the sun-dried tomatoes as desired. Cut the assorted meats into small cubes.

3. In a mixer bowl, mix eggs and kefir, adding sugar and salt.

4. Sift wheat flour with baking powder and add to the egg-kefir mixture. Mix with a mixer.

5. Add cheese, tomatoes, cold cuts, thyme to the dough and mix gently with a spatula.

6. Lightly spray a rectangular nonstick baking pan with olive oil.
