Recipe instructions

Step 1

Step 1
How to bake muffins with raisins in kefir molds? Measure out the required ingredients. Prepare kefir and eggs in advance so that they are warm at room temperature. Use premium quality wheat flour. Wash the raisins. If it is dry, soak it in water for 15 minutes to soften it. Dry the raisins well.

Step 2

Step 2
Combine flour with baking powder and sift into a convenient wide container. As a result of sifting, the flour is saturated with oxygen, thanks to which the baked goods will rise well.

Step 3

Step 3
Melt the butter on the stove over low heat, without letting it boil. Let the oil cool slightly.

Step 4

Step 4
In a suitable sized bowl, beat the eggs until smooth. How to beat eggs? This recipe does not require special fluffiness when whipping, so just use a regular whisk.

Step 5

Step 5
Add sugar and vanilla sugar to the egg mixture and whisk until the sugar is partially dissolved. Vanilla sugar can be replaced with vanillin.

Step 6

Step 6
Pour in cold kefir and stir.

Step 7

Step 7
Add melted, non-hot butter, mix the mixture well until smooth.

Step 8

Step 8
Add flour sifted with baking powder.

Step 9

Step 9
Stir the dough until all lumps of flour disappear. The dough turns out thick, viscous, homogeneous.

Step 10

Step 10
Add raisins and lemon zest to the dough.

Step 11

Step 11
Mix everything thoroughly so that the additives are evenly distributed throughout the entire dough.

Step 12

Step 12
Place the batter into portioned muffin tins. Fill the molds 3/4 full with dough, as the cupcakes will rise a little during baking.

Step 13

Step 13
Bake the cupcakes in an oven preheated to 180C for 25 minutes until golden brown. Baking times may vary depending on oven operation. Check readiness with a wooden skewer. If the skewer comes out dry from the center of the cake, the cake is ready. Let it cool slightly and remove from the molds.

Step 14

Step 14
English muffins with kefir raisins are ready. If desired, you can sprinkle them with powdered sugar before serving. Bon appetit!
