Ingredients (8 portions)

Basic:

Olive oil 2 tbsp
Salt to taste
Chicken breasts 700 g
Bulb onions 2 pc
Champignon 300 g
Dry spices (here, see for yourself. I take ground ginger, a little freeze-dried garlic or garlic powder.) to taste
Dill 1 g
Green pea (frozen) 100 g
Soft cheese (I take Adyghe) 150 g
Zucchini (or regular zucchini) 1 pc

Recipe instructions

Grate the cheese on a fine grater.

Peel the zucchini. Grate the pulp on a coarse grater. Chop the resulting shavings.

Clean and cut the champignons. Peel and chop the onion.

Fry onions and champignons in olive oil.

Blanch frozen green peas by immersing them in boiling water for a few minutes (usually 2-4 minutes, no more). Once the blanching time is up, use a slotted spoon to quickly transfer the peas to a bowl of ice. This stops the cooking process immediately, and the color of the peas remains attractive — rich green.

Finely chop the dill. Grind the chicken breasts along with the fried champignons and onions in a meat grinder. Add zucchini, cheese, dill, and green peas to the minced meat. Salt and pepper to taste. Mix thoroughly.

Using hands dipped in cold water, form the chicken mixture into small balls and place into muffin tins.
