Ingredients (10 portions)

Basic:

Salt (pinch) to taste
Wheat flour (may need more) 250 g
Milk 130 g
Vanillin (on the tip of a knife) to taste
Egg yolks (Itʼs better to take large eggs) 3 pc
Sour cream (fat) 2 tbsp
Powdered sugar 100 g
Sunflower oil (odorless, for frying) 400 ml

Recipe instructions

Step 1

Step 1
How to fry crispy brushwood in milk? Prepare the necessary products. Rinse and dry the raisins thoroughly. Sift the flour. Thanks to this, it will be saturated with oxygen, and the dough will turn out more tender.

Step 2

Step 2
Carefully separate the yolks from the whites. Place the yolks in a deep container (set aside 1 teaspoon of the yolk — it will be useful for decorating the brushwood) and whisk them with one tablespoon of powdered sugar and a pinch of vanilla.

Step 3

Step 3
Pour milk into the yolks, add sour cream, salt and mix everything until smooth.

Step 4

Step 4
Add three-quarters of the total amount of flour and knead into a stiff dough. You may need a little more or a little less flour than the specified amount. Focus on the consistency of the dough. If it sticks to your hands, add the rest of the flour to it.

Step 5

Step 5
Place the dough in a plastic bag and let it rest for 15-20 minutes at room temperature. This will make it more elastic and easier to work with.

Step 6

Step 6
For convenience, divide the dough into 3 parts. Roll out each part into a thin flat cake no more than 2-3 mm thick. From the rolled out dough, cut out paired circles using shot glasses or glasses with a thin rim (or special cookie cutters). In this case, in a pair, one circle should be larger in diameter than the second.

Step 7

Step 7
Make 5-6 cuts with a knife on each circle, without touching the core. This way you will outline the petals of future flowers.

Step 8

Step 8
Next, place the small circle on top of the large one. Press them firmly in the center with your fingertip to hold them together. Press a raisin into the center of each flower, brushed with egg yolk, reserved specifically for this purpose. The yolk works like glue. If this is not done, the raisins will fall off the flowers during deep frying.

Step 9

Step 9
You can also cut the rolled out dough into strips and make diagonal cuts with a knife. You will get twigs and leaves.

Step 10

Step 10
Place a cauldron or a suitable pan with oil on the fire and after it is hot, fry the prepared brushwood in it. When frying, turn the brushwood over so that it browns evenly on all sides. The brushwood cooks very quickly, so don’t leave the stove; literally after 2-4 minutes you need to remove it.

Step 11

Step 11
Place the finished brushwood on a plate with a napkin to absorb excess fat.

Step 12

Step 12
Then generously sprinkle the still warm brushwood with sifted powdered sugar. Enjoy your tea!
