For dough:

Wheat flour 2.5 cup
Kefir 1 cup
Salt 0.5 tsp
Soda 1 tsp
Ground coriander 0.3 tsp
Ground black pepper 0.3 tsp

For filling:

Greenery to taste
Cottage cheese 250 g
Potato 6 pc
Sour cream 4 tbsp

Khichin is a delicious Adyghe dish, which is something between a flatbread and a pie with filling. The peculiarity of preparing khichin is that they are fried without the use of oil — in a dry frying pan. The dough is very easy to prepare! It requires flour, kefir, soda, salt and spices. For the filling, prepare potatoes, Adyghe cheese, sour cream and herbs. Boil six medium-sized potatoes whole in advance in salted water.

Add soda, salt, coriander and pepper to kefir. There is no need to extinguish the soda first — kefir will do this. Mix thoroughly.

Pour flour into the resulting mixture in small portions and stir. When all the flour is in the bowl, knead the dough.

Knead the dough until it stops sticking to your hands. It wonʼt take much time — literally a few minutes. The dough should be dense and elastic.

Prepare the filling. Start with potatoes, which you grate on a coarse grater.

Do the same with cheese. If the cheese is soft and has a consistency similar to cottage cheese, you can simply mash it with a fork. Add cheese to grated potatoes.

Place 4 tbsp in a bowl with potatoes and cheese. spoons of sour cream and chopped herbs.

Mix the ingredients. The filling is ready!

Divide the dough into nine equal parts. Roll each into a pancake 3-5 mm thick.

Place a couple of tablespoons of filling in the center of the pancake, then lift the edges and pinch them in the center. Try to do this so that as little air as possible remains inside — otherwise the dough may burst when rolling out later.

Turn the pancake seam side down and roll it out again. Do this carefully so that the dough does not tear.

You can start frying. Heat the frying pan; no need to grease it with oil. Add the patty and fry it for about 3 minutes.
