How to make fluffy zucchini pancakes in a frying pan? Prepare your food. What kind of zucchini works best? Choose young fruits with delicate skin and small seeds. The amount of flour may differ from that stated in the recipe, it will depend on the juiciness of the zucchini.

Wash the zucchini, cut off the ends and peel. It is convenient to do this with a vegetable peeler; then a very thin layer will be removed. It is not necessary to cut off very thin skin. If using more mature squash, trim off the rough skin and scoop out the seeded center.

Grate the zucchini on a medium grater. Or on a large one, in which case the pancakes will turn out more textured.

Using your hands, squeeze the juice out of the zucchini mass. Drain it into a separate bowl, but do not pour it out, the juice may be useful later.
