Ingredients (6 portions)

Basic:

Sugar 150 g
Wheat flour 200 g
Butter (room temperature) 150 g
Eggs (small or 2 large) 3 pc
Coffee (strained strong) 50 g
Baking powder 1 tsp
Dark chocolate 100 g
Liquor (I have Irish cream) 3 tbsp

Beat soft butter with sugar.

Add 3 eggs one at a time, beating thoroughly after each.

Break the chocolate into small pieces and melt in the microwave or in a water bath. Add the cooled melted chocolate to the cream mixture. Mix thoroughly.

Add chilled coffee and liqueur (if you don’t like coffee and alcohol, replace them with milk). Mix.

Sift the flour with baking powder and add to the chocolate mixture.

Mix thoroughly so that there are no lumps. The dough turns out very tender and airy. If desired, you can add berries or nuts to the dough.

Place the dough in one large or small mold. I love baking single-serve cupcakes.

Bake chocolate cupcakes at 180 C for about 20 minutes (small ones), check readiness with a skewer. Let the cupcakes cool and serve.

Sprinkle the finished chocolate cupcakes with powdered sugar. And as an option, serve with sour cream (it’s just very, very tasty!). Bon appetit!
