Take 125 ml of milk and water, mix them and heat (no more than 40 degrees), add dry yeast, stir and leave for 5-10 minutes while the rest of the ingredients are mixed so that the yeast is slightly activated. Break two raw eggs into a deep bowl, add sugar, salt and beat them with a mixer or whisk into a light, fluffy mass.

Pour the remaining milk (preferably warm) and the dough (suitable yeast with milk and water) into the prepared mixture. Knead the dough. The dough turns out thick, but viscous, just like pancake dough.

Cover the bowl with the dough with a damp towel and place in a warm place for 45 minutes (it may take an hour depending on the room temperature and yeast activity). During this time, the dough for pancakes with apples should increase 2 — 3 times.

It is better to choose apples for pancakes that are sweet and not hard. I took simple seasonal apples. Peel the apples, remove the core and cut into rings. Or cut into rings first and then remove the core with a knife. Place sugar in a flat bowl.

Heat a frying pan over medium heat and pour in some vegetable oil. Dip the apple circle first into sugar and then into the dough and place it in the pan, not too close to each other. Fry pancakes with apples first for a few minutes on one side until golden brown, then carefully turn them over and on the other side until cooked (ready pancakes should not have raw edges). Fry all the pancakes in this way, adding vegetable oil to the pan if necessary.
