Salt 0.25 tsp
Sugar (heaped spoon) 1 tbsp
Wheat flour 3 cup
Butter 30 g
Milk 1 tbsp
Eggs 1 pc
Egg yolks 1 pc
Vegetable oil 10 ml
Powdered sugar 2 tbsp
Kefir 150 ml
Dry yeast (active) 2 tsp
Jam (thick) 150 g

Heat the kefir slightly (to about 35 degrees), pour into a large bowl. Add sugar, salt, yeast. Cover the cup with a towel and place in a warm place for 20 minutes. There is no need to overheat kefir, as high temperatures will kill the yeast. After a while, a foamy cap will appear on the surface, which means the yeast is active, otherwise you need to use other yeast. Melt the butter in a water bath or in the microwave and cool. Pour it into the kefir mixture, beat in the egg. Mix everything. Sift the flour and add two thirds at once, mix all the ingredients well. Add the remaining flour in small portions. Knead the dough with your hands until it stops sticking. You may need less or more flour, check the consistency. Cover the dough in the bowl with a towel and place it in a warm place again for 1-1.5 hours. The dough should double in volume.

Punch down the risen dough, place it on a lightly floured surface and roll it out into a layer half a centimeter thick. Cut it into triangles.

Place a little jam on the wide side of each triangle. Roll the bagels and place them on a baking sheet, which you have previously greased with vegetable oil.

Mix the milk and yolk and brush each bagel with this mixture. Leave them to stand at room temperature for 20 minutes. During this time they will increase slightly in size.
