Sour cream (not greasy, no slide) 1 tbsp
Tomato paste (no slide) 1 tbsp
Vegetable oil 100 ml
Pangasius 500 g
Basil (or oregano) to taste
Garlic powder to taste

How to quickly and tasty fry pangasius fillet in batter in a frying pan? First, remove the fish from the freezer and leave to defrost at room temperature.

To make the fillet defrost faster, I sometimes immerse it in cold water for a while. Then I drain the water, place the pangasius on paper napkins and dry the fish on all sides with them to get rid of excess water.

Cut the pangasius into portions about 4-5 centimeters wide. Can be sliced thinner if desired.

Beat the egg into a separate container, add sour cream and tomato paste. Salt, pepper, sprinkle with your favorite dry spices. I used a pinch of nutmeg and dried basil. Stir.

Gradually add the sifted flour and immediately stir everything with a whisk so that no lumps form.

You may need a little more flour, depending on the consistency of the batter. It should be like not very thick sour cream.

To evenly distribute the batter throughout the fish, I lower the pangasius into the container and gently mix the pieces with a tablespoon.

Heat odorless vegetable oil in a thick-bottomed frying pan. Fry the fish over low heat on both sides until cooked. This will take very little time, focus on the batter, it should be fried.
