Ingredients (8 portions)

Basic:

Salt (pinch) to taste
Sugar 1 cup
Cinnamon to taste
Wheat flour 250 g
Vanillin (on the tip of a knife) to taste
Eggs 2 pc
Vegetable oil 100 g
Baking powder 1.5 tsp
Pumpkin 200 g
Cottage cheese (Dry) 250 g

Beat eggs with sugar, salt and vanilla into a fluffy mass.

Add cottage cheese and butter. Beat again.

Add finely grated and squeezed pumpkin and cinnamon. Beat.

Then sift flour and baking powder into the dough. Mix.

Place the dough into muffin tins (silicone ones do not need to be greased). Place the pumpkin muffins in a preheated oven for 30-40 minutes at 180 degrees. Baking time depends on the size of your ramekins. After 20 minutes of baking, check readiness with a toothpick (it should come out dry). Cool the finished cupcakes, remove from the molds and decorate as desired.
