Recipe instructions

Step 1

Step 1
How to make pumpkin casserole with cottage cheese and apples without flour? First of all, turn on the oven to preheat, set the temperature to 180 degrees. Prepare your food. Peel the pumpkin and finely chop it into strips or cubes. You can also grate it using a coarse grater or a Korean carrot grater.

Step 2

Step 2
Do the same with the apple. You can peel it first. I didnʼt do this.

Step 3

Step 3
Beat the cottage cheese with a blender, in a chopper or rub through a sieve. Use any means, as a last resort, mash it with a fork. The grated cottage cheese turns out homogeneous, and the casserole from it comes out much more tender. Take high-quality, natural cottage cheese, without vegetable fats. The lower its fat content, the less calorie-rich the casserole will be.

Step 4

Step 4
Add vanilla sugar and honey to the curd mass. Beat the mixture with a whisk or in a blender.

Step 5

Step 5
Next, add starch and sour cream. Also take the most delicious sour cream, choose the fat content yourself. Mix well.

Step 6

Step 6
Wash the eggs well, separate the yolks from the whites. Add the yolks to the cottage cheese, stir.

Step 7

Step 7
Beat the egg whites with a mixer until stiff peaks form.

Step 8

Step 8
Place the protein mixture into the curd mixture and mix them. You can use a whisk, or you can use a spoon. Do this carefully, using upward movements, so as not to damage the puffed egg whites. Grease the baking dish with oil.

Step 9

Step 9
Place part of the curd mass into the mold, a layer of pumpkin and apples on it, then again the mass, pumpkin/apples, place the remaining cottage cheese on top. Bake the dish for 30-35 minutes, depending on the features of your oven. Check readiness with a wooden skewer — as soon as the cottage cheese stops sticking to it, the casserole is ready.

Step 10

Step 10
Donʼt rush to remove the casserole right away. Let it cool in the oven so it doesnʼt fall too much. Serve it with sour cream, jam or condensed milk. Bon appetit!
