Recipe instructions

Step 1

Step 1
How to make Chechen flatbreads in a frying pan? Prepare the necessary ingredients for this. It is best to take kefir that is not fresh. This will work better with baking soda. Use dry cottage cheese for filling. Otherwise, whey will leak out of it when frying. It is better to take green onions as a base for greens. And you can supplement it with dill or parsley.

Step 2

Step 2
To prepare the dough, take kefir at room temperature. Add salt and soda to it. Mix.

Step 3

Step 3
The soda will react with kefir and bubbles will appear on the surface. If kefir is not very sour, you can add a little lemon juice or vinegar.

Step 4

Step 4
Then gradually add the sifted flour and mix it into the dough.

Step 5

Step 5
Use the amount of flour based on the consistency of the finished dough. Remember that you may need less or more flour, you can read more about this in the article, the link to it is at the end of the recipe. The dough will be soft and will not stick to your hands. Cover it and leave it to stand.

Step 6

Step 6
At this time, start preparing the filling. Wash the greens, dry and finely chop. Place cottage cheese in a bowl, add finely chopped herbs to it. Beat in the egg. Add salt and spices to taste. Mix everything. Wash the egg first with a food grade cleaner.

Step 7

Step 7
Divide the dough into 6 parts.

Step 8

Step 8
Roll each part into a thin layer into a flat cake. Place some of the filling and spread it over half of the flatbread, not reaching the edges.

Step 9

Step 9
Cover the filling with the other half of the dough. Trim the edge to form an even semicircle. So form 6 cakes. The scraps of dough will make 2 more cakes.

Step 10

Step 10
Fry the tortillas in a dry frying pan for 2-3 minutes on each side. The cakes should be toasted and golden brown. You can learn how to choose the right frying pan by reading the article, the link to which is at the end of this recipe, under the steps.

Step 11

Step 11
Immediately, when they are still hot, grease the finished cakes with butter and stack them on top of each other.

Step 12

Step 12
