Just keep in mind that you get a lot of meringue — from two whites I got one large baking sheet and one small one. To ensure that the whites are well beaten, separate them from the yolks very carefully — even a drop of yolk will prevent the whites from whipping.

Letʼs prepare Swiss meringue. To do this, take a suitable fireproof bowl of a size that can be placed on top of the saucepan. In this case, the bottom of the bowl should not touch the water. Pour the whites into a bowl, add sugar to them. When the water in the saucepan boils, reduce the heat to low and place the bowl on top. With constant stirring, heat the whites until warm, almost hot.

If you have a thermometer, use it to measure your temperature. It should be about 40 degrees. If you don’t have a thermometer, touch the whites with your fingers — they will be noticeably warm. The sugar should dissolve; when rubbed, you will not feel any grains.

Pour the heated egg whites into the bowl of a stand mixer. Beat them for a long time, 15-20 minutes until very thick. You can also beat the whites with a hand mixer, but it will take more time.

You can color the whites in different colors. I paint in the same bowl where they were whisked. I drip the dye into one half and mix it in with a spatula. In this case, the pattern on the meringues will be marbled. You can divide the meringue into several parts and color each separately. Place the meringue into a piping bag fitted with a star tip.

Plant the meringue in the form of roses, rosettes, flowers, etc. Immediately insert wooden skewers into the roses. You can sprinkle the top of the meringue with confectionery sprinkles.
