Basic:

Olive oil 30 ml
Wheat flour 370 g
Water 200 ml
Parmesan 50 g
Rosemary 1 pc
Dry yeast 10 g
Sea salt 5 g

1. Preparing focaccia, of course, begins with preparing the dough. Go! Add yeast, 1 tbsp salt, water and olive oil to the sifted flour. Knead everything until it forms a dough. Cover and leave our dough for 1 hour.

2.After an hour, grease the parchment with oil and place our dough on it, having previously given it a shape. Cover with cling film and leave for about 30 minutes.

3. While the dough is rising, we will prepare the rosemary cheese. Grate the cheese and separate the rosemary leaves from the sprig.

4. Half an hour has passed. Remove the film from the dough. We press small indentations in the dough with our fingers to give relief to our bread. Sprinkle cheese and rosemary on top. Gordon recommends adding a little commercial sea salt. I didnʼt have that, so I added pink salt. It is quite possible to do without this step. Iʼll brush the edges of the focaccia a little for better baking. Ready ! Can be placed in the oven: without fan — for 25 minutes at t 200C, with fan — at t 180C.
