Kefir 1 cup

How to bake sweet buns with poppy seeds from yeast dough? Prepare the necessary ingredients for the dough. Melt the butter in the microwave or in a water bath.

Add a tablespoon of sugar, a tablespoon of flour and dry yeast into a bowl.

Heat kefir in a saucepan or in a microwave oven at low power to 30-35 degrees. It should be warm, but not scalding. If kefir is too hot, the yeast will die. Pour warm kefir into a bowl with dry ingredients, mix everything and place in a warm place for 15-20 minutes. Meanwhile, sift the flour 1-2 times so that the flour is well saturated with oxygen. Thanks to this, the buns will turn out especially fluffy and tasty.

After the specified time, add chicken eggs into the prepared mixture and mix until smooth. Pour in the melted butter and mix well again.

Start adding the sifted flour in parts, stirring the mixture well with a spoon each time. When the dough becomes difficult to stir with a spoon, turn it out onto a floured surface and continue kneading.

You may need a little more or a little less flour than the specified amount. Focus on the consistency of the dough: it will be smooth and elastic. The dough is slightly sticky, but does not stick to your hands. Place it back in the bowl, cover with a towel or cling film and leave in a warm place for a couple of hours. During this time, when the dough has risen, punch it down and let it rise again.

Prepare the necessary ingredients for the filling. Remove the butter from the refrigerator in advance to allow it to come to room temperature. Turn the oven on 180 degrees. Rinse the poppy seeds with water and pour boiling water over them. Cover the container with poppy seeds with a lid and leave it to steam for 15-20 minutes. Then drain the water through a sieve. Grind the poppy seeds in a mortar or crush them with a rolling pin.

Roll out the finished dough into a rectangle and brush with softened butter. Place poppy seeds on top and sprinkle with sugar.
