How to make crumpets with soda and kefir in a frying pan? Very simple! To begin, prepare the necessary ingredients according to the list. Take the highest grade flour. Kefir is suitable for any fat content, but keep in mind that the amount of flour depends on the moisture content of kefir. Kefir should be at room temperature, so remove it from the refrigerator in advance.

Pour room temperature kefir into a bowl. Add baking soda, sugar and salt. Mix everything. Leave for 5 minutes — the kefir will foam strongly and the mass will increase 2-3 times, so take the bowl deeper.

Add sifted flour in parts and knead into a homogeneous, soft, fluffy dough. First add 300 g of flour and gradually add the rest. The exact amount of flour depends on the quality of the flour itself and the moisture content of the kefir, so you may need more or less flour.

However, you should not fill the dough with flour, otherwise it will become too dense, and the finished donuts will come out rubbery and will not rise well. Focus not so much on the numbers in the recipe, but on the consistency of the dough. My dough was slightly sticky, but soft like fluff. It’s better to sprinkle the table and rolling pin with flour when rolling, the dough will take as much as it needs.

Lightly sprinkle the finished dough with flour, roll it out into a layer 1.5-2 cm thick and use a glass or mold to cut out even round pieces. I got 20 blanks. You can also roll the dough into a sausage and cut it into the same number of pieces and form round cakes with your hands.

Heat vegetable oil in a frying pan over medium-high heat. The oil should cover the bottom of the pan to a height of about 5mm. Fry the crumpets for 3-5 minutes on each side until golden brown. If the oil starts to bubble, cover the pan with a lid.
