How to make red velvet cupcakes at home? Prepare all the necessary ingredients. For this recipe, I advise you to strictly measure the ingredients on a scale. Even eggs. To do this, I broke two eggs into a cup, beat them well and then measured them. Take low-fat kefir.

First, in a separate bowl, mix all the dry ingredients — flour, sugar, cocoa and baking powder. Sift dry ingredients through a sieve. Read about baking powder in a separate article, link at the end of this recipe.

In another bowl, combine all liquid ingredients: eggs, butter and kefir. Add a teaspoon of food coloring there.

Mix all ingredients well with a mixer. It turns out to be such a bright mass.

Now we need to combine the dry with the liquid: pour the flour in parts into our red mass. Stir with a spoon. A mixer is absolutely not needed here. We should just wet all the flour, no more. There should be no dry lumps left. The dough may seem a little loose and uneven — this is how it should be, this method will give an unprecedented softness to the crumb, believe me! Place special paper liners for cupcakes in a cupcake pan (I have silicone, but it could just be iron). Fill them with dough, about 2/3 full. From this amount of dough I got 10 pieces. Bake in the oven at 175°C. Do not open the door for the first 12 minutes, then check every 2 minutes. They should feel springy to the touch and a toothpick should feel dry when inserted and removed. Mine took about 20 minutes to bake.

How to make cupcake cream? Prepare the necessary products. The butter must be removed from the refrigerator in advance so that it has time to soften.
