Salt 2 g
Sugar (+ for sprinkling) 100 g
Wheat flour 500 g
Butter 50 g
Milk 1 cup
Chicken eggs (1 piece — for the dough 1 piece — for greasing) 2 pc

How to bake buns from yeast dough. Prepare all ingredients. Pour milk heated to 36 degrees into the container; you can check the temperature with a clean finger; it should be comfortable at this temperature. Add a tablespoon of sugar, stir until the sugar is completely dissolved. Add a tablespoon of wheat flour and dry yeast, stir until the mixture becomes homogeneous in consistency. Place the mixture in a warm place for 15 minutes.

In a separate bowl, beat the chicken egg. Melt the butter in the microwave and cool it to room temperature. Be sure to wash the egg with baking soda under running water, as there may be harmful bacteria on its surface.

When the yeast is activated (a foamy cap appears), pour the egg mixture and melted butter into the bowl, add the remaining sugar and salt. Stir the ingredients until the mixture is homogeneous in consistency. If the yeast is not activated, then you need to take another one; with these, the baking will not be airy.

Add wheat flour sifted through a sieve. It is advisable to sift the flour several times to saturate it with oxygen; this helps the yeast dough to rise better and produce fluffy baked goods.

Add wheat flour in parts, stirring the dough with a spoon each time. When it becomes difficult to mix the dough with a spoon, put it on the table, add flour and continue kneading.

You may need a little less or more flour, depending on the density and quality of the product. The dough should be smooth and elastic, slightly sticking to your hands. Place the dough back into the bowl, cover it with cling film and leave to rest on the counter for 20 minutes.

Place the dough on a floured work surface.

Divide the dough into small pieces and roll them into balls.

Place them in a greased baking dish, leaving space between the dry yeast buns. Place the mold in a warm place for 10 minutes to rise. Brush the top of the risen buns with a beaten chicken egg, sprinkle with sugar and place in an oven preheated to 180 degrees to bake for about 25 minutes. The times are approximate, be guided by the operating characteristics of your oven.
