For dough:

Salt to taste
Sugar 1.5 tbsp
Wheat flour 500 g
Water 280 ml
Sunflower oil 40 ml
Yeast 2 tsp

For toppings:

Garlic 1 clove
Ground hot pepper to taste
Butter 3 tbsp
Any cheese 50 g
Raisin 0.5 tbsp
Parsley 2 tbsp
Paprika 1 tsp
Turmeric 1 tsp
Sesame 1 tbsp
Cranberry 0.5 tbsp
Poppy food 1 tbsp
Pine nuts 1 tbsp

How to make monkey bread? Prepare the ingredients for the dough. The water should be warm, but not hot, about 40 ⁰C. Wheat flour, premium grade. Use fast-acting yeast that you are confident in. If you are not sure about the performance of the yeast, it is better to prepare the dough in advance. Use refined, odorless oil.

Add all dry ingredients to a deep bowl: sift ⅔ flour, add sugar, yeast and salt.

Pour in warm water and vegetable oil.

Knead the dough, adding flour if necessary. The dough should not stick to your hands in the end. As soon as it stops sticking too much to your hands, stop adding flour. Remember, the more flour in the dough, the less airy the baked goods will be. Leave the dough for 2 hours in a warm, draft-free place.

This is how my dough rose after 2 hours of proofing. By the way, I leave the dough to rise in a closed microwave, in which I just heated a glass of water.

Using your hands, pinch off balls of approximately 50-70 grams in weight from the dough. Lay them out on your work surface.

Prepare everything you need for the filling and toppings. Grind the dried cranberries with raisins and add ground black pepper. Grate the semi-hard cheese on a fine grater. Wash the greens and chop finely. Nuts can also be any kind, chop them.

Leave a little oil to lubricate the frame. Melt the remaining butter for 10 seconds in the microwave until liquid. Grate the garlic on a fine grater and mix with oil.

First dip each bun into oil on all sides.

Place the buns in a greased pan with a hole in the middle in a chaotic manner. Cover the bread and leave to rise in a warm place for 30 minutes.

This is how well my bread rose during this time. Bake the bread in an oven preheated to 180°C for 30-40 minutes until ready.
