Lingonberry Oatmeal Muffins

A real treat for adults and children. This year I’m trying to bake pies and muffins with oatmeal more often. They turn out completely different than with the usual wheat — more crumbly, soft, velvety in texture. The same cake can be baked with any other winter and summer berries — currants, cranberries, blackberries.

Recipe instructions

Step 1

Step 1
Prepare the ingredients. To prepare oatmeal muffin with lingonberries we will need: wheat flour, oat flour, soft butter at room temperature; eggs; kefir; sugar; baking powder; cowberry. Powdered sugar for sprinkling the finished cake.

Step 2

Step 2
In a bowl, combine soft butter and sugar. Beat with a mixer until fluffy.

Step 3

Step 3
Add eggs one at a time, beating after each egg.

Step 4

Step 4
The result should be a fairly fluffy mass.

Step 5

Step 5
Pour in kefir and beat again until smooth.

Step 6

Step 6
Sift oat and wheat flour with baking powder. Add flour to dough. You can add it in parts, I usually add most of the flour (all oatmeal, and about half the wheat flour) and gradually, little by little, mix it in with a mixer. And based on the resulting consistency of the dough, I see if I need to add the rest of the wheat flour.

Step 7

Step 7
The result should be a fairly thick, homogeneous and aromatic dough.

Step 8

Step 8
Sort out the lingonberries, rinse and dry on a towel.

Step 9

Step 9
Pour the berries into the dough and mix gently with a spatula so as not to crush the berries and they are evenly distributed throughout the dough.

Step 10

Step 10
Pour the dough into the cake pan and smooth it out. I used a silicone mold, so I didn’t grease it with anything — the finished cake came out of the mold perfectly. If the mold is glass, ceramic or steel, then it needs to be greased with butter and preferably sprinkled with flour. Bake the cake for about 35 minutes at 180°C.

Step 11

Step 11
Cool the finished cake slightly, remove from the pan and sprinkle with powdered sugar. Cut the cake into pieces and serve. Bon appetit!
