Ingredients (8 portions)

Basic:

Sesame 1 tbsp
Flax seeds 1 tbsp

For dough:

Salt to taste
Sugar 2 tsp
Wheat flour 400 g
Egg whites 2 pc
Kefir 250 ml
Dry yeast 10 g

For filling:

Onion 3 pc
Hard cheese 50 g
Vegetable oil 3 tbsp
Paprika to taste
Cream 50 ml
Italian herbs to taste

How to bake homemade onion roll? Prepare all the ingredients for the filling. Remove kefir, cream and eggs from the refrigerator in advance. They should be at room temperature. Peel the onion and chop into small cubes. Heat sunflower oil in a frying pan with low sides. Pour cream into the onions. Season with salt and add smoked paprika. Stir everything and simmer for about 10 minutes. Read more about using cream in a separate article at the link at the end of the recipe.

Once the excess liquid has evaporated, add dried herbs to the filling, stir and turn off the heat. The onion filling must cool completely.

Prepare all the necessary ingredients for the dough. Sift the flour to saturate it with oxygen. This will make the finished roll more airy. Pour dry yeast into kefir at room temperature. Add egg whites. Mix the mixture thoroughly.

Knead elastic dough. As a result, it should not stick to your hands. Then you can immediately start rolling out, but I recommend covering the dough with a towel and letting it rest for 10-15 minutes. Turn on the oven to 200 degrees.

Roll out the “rested” dough into a layer about 3 mm thick.

Spread the onion filling evenly over the dough, leaving a little space from the edges.

Sprinkle the onion with finely grated cheese.

Fold the two opposite edges inward.

Carefully roll up the roll.

Place the roll in a greased pan. Using a pastry brush, brush the roll with egg yolk and sprinkle with flaxseeds and sesame seeds if desired.
