Add soda and salt to warm kefir and mix well. The acid contained in kefir will begin to interact with the soda, and the mass will bubble.

We begin to introduce flour in portions. The dough for scones should be very soft, so the amount of flour must be controlled. I added flour in three additions. Each time you need to sift the flour — this way it will be enriched with oxygen, and the baked goods will be more fluffy.

After each portion of flour, stir it into the dough with a spatula. At first the dough will be completely liquid, then it will begin to thicken.
