Wheat flour 400 g

Vegetable oil 3 tbsp
Dry yeast 1 tsp

Sugar 0.5 tsp

Suluguni 500 g
Butter 50 g

How to make khachapuri with suluguni cheese in the oven? Prepare the ingredients for the test first.

Sift 350 grams of flour into a bowl. Thanks to this, the flour will be saturated with oxygen, and the finished dough will turn out more tender and fluffy. Add yeast and mix well.

Heat the water slightly to a temperature of approximately 38 degrees. It should become pleasantly warm, but not hot. Otherwise, the yeast may die if it comes into contact with it. Pour the water into the flour. Knead the dough. Mix first with a spoon and then with your hands. The dough will quickly become smooth, elastic and non-sticky. During the kneading process you may need more flour, use the remaining 50 grams or a little more. Cover the bowl and leave the dough to rise in a warm place for 30-40 minutes. I always put yeast dough in the oven with the light on.

While the dough is rising, prepare the filling.

Grate the cheese on a coarse grater, set aside a little, you will need to sprinkle it on top of the khachapuri. Also grate the butter. Mix cheese and butter.

The dough will approximately double in size after rising.

Separate half the dough and place it on a floured work surface. Roll out the dough into a circle about 5mm thick. Place half of the cheese filling in the center of the dough and distribute it evenly.

Gather the edges of the dough towards the center into a knot and pinch.

Carefully roll out the dough with a rolling pin into a thin cake. Turn it seam side down. Using a knife, make a small hole in the center to allow steam to escape.
