Ingredients (4 portions)

For the test::

Salt 1 g

Wheat flour 400 g
Butter 60 g
Eggs 2 pc
Honey 70 g
Soda 1 tsp

For cream::

Powdered sugar 4 tbsp
Heavy cream 400 g
Cottage cheese 250 g

How to make honey cream cakes? Prepare the necessary ingredients for this.

Combine butter and honey in a non-stick pan. Place on the fire and wait for the butter to melt.

Separately, mix eggs with sugar.

While stirring, add the melted butter to the eggs. Then pour everything back into the pan and return to the heat. Bring to a boil while stirring constantly and remove from heat.

Add baking soda and stir. The mass will begin to foam and increase in volume. This is the reaction of honey with soda. Leave everything to cool until warm.

Then add the sifted flour and knead the dough.

The finished dough is soft, plastic and does not stick to your hands. Leave it to sit for a while. If the cakes will not be baked right away, you can put the dough in a bag in the refrigerator and store for a week.

Roll out the dough on a sheet of parchment and cut out the future size of the cakes with a cookie cutter. Remove excess dough. Place in the oven, preheated to 180 degrees, for 3-5 minutes. Honey dough is prepared very quickly. The blanks will turn golden. Cool them down. The number of finished cakes will depend on the selected diameter of the blanks.

For the cream, whip the cream, with a fat content of 33%, with powdered sugar until a fluffy, stable cream. Then stir the cream cheese into the cream.

Using a pastry bag, pipe the finished cream onto the honey cakes. If desired, you can add jam to the center. I really like the combination with blackcurrant.

Assemble the cakes completely, place in a sealable container and refrigerate overnight. In a closed container, all the moisture from the cream will be soaked into the cakes and will make them soft and juicy.
