Sugar 60 g
Water 40 ml
Sour cream 200 g
Gelatin 1 tbsp
Cookie (Oreo) 100 g
Kefir 500 ml
Vanilla extract 1 tsp

How to make dessert from kefir and gelatin? Very simple! To begin, prepare the necessary ingredients according to the list. Choose high-quality dairy products; the fat content can be any, just keep in mind that the calorie content of the dish will depend on this. I have kefir with a fat content of 3.2%, and sour cream — 20%. You can increase or decrease the amount of sugar according to your taste. You can replace vanilla flavoring with 1 tsp. vanilla sugar or a pinch of vanillin.

Soak the gelatin in 40 ml of cold water and leave to swell for 10 minutes. Then dissolve the gelatin over low heat and bring almost to a boil, but do not boil. With the same amount of gelatin as in the recipe, the dessert will become dense, but fluid. The consistency is similar to an elastic cream. If you need an even thicker consistency, add another 1 tbsp. l. gelatin.

In a bowl, combine kefir, sour cream, sugar and vanilla flavoring. Beat the mixture with a mixer at low speed for about 3 minutes. The mass will be fluid, with many small air bubbles.

Without stopping whisking, pour in the dissolved gelatin in a thin stream. Continue beating for about 3 minutes. The mixture will remain the same fluid.

Pour the resulting mixture into bowls or glasses. I had enough kefir mixture for 2 bowls and 2 glasses, that is, for 4 servings. Place the dessert in the refrigerator for 1-2 hours until set. During this time the mass will become denser.

While the dessert is gelling, break the Oreo cookies into pieces. I used classic cookies with white cream inside without additives. But you can also take other cookies, for example strawberry or chocolate flavored. You can also replace Oreo with any other cookie of your choice.
