Take the highest grade flour. If you wish, you can make trifles with white sponge cake. In this case, replace the cocoa with the same amount of flour.

Divide the eggs into yolks and whites. It is important that when separating, not a drop of yolk gets into the white, otherwise it will not foam. Beat the egg whites with a mixer and sugar until fluffy.
