No-Bake Cottage Cheese and Gelatin Dessert

Basic:

Sugar 100 g
Water 75 ml
Gelatin 15 g
Cottage cheese 400 g
Yogurt (natural, without additives, or sour cream) 300 g
Vanilla sugar 0.5 tsp
Berries (any, I have raspberries) 1 cup

How to make dessert from cottage cheese with gelatin without baking? Prepare your food. Take natural, high-quality, tasty cottage cheese — the result will depend on this. It is better if the cottage cheese is not grained. Choose any fat content. Natural yogurt, without additives, is suitable. You can use sour cream instead.

Pour gelatin with clean water at room temperature. Stir and leave for 15 minutes to swell. I used fast-acting gelatin, it can be kept for a shorter time.

Place cottage cheese in a bowl, add sour cream, sugar, regular and vanilla. I have it with natural vanilla, so it’s dark. Adjust the amount of sugar to your taste; you can reduce or increase it.

Blend all ingredients with an immersion blender. You should get a homogeneous mass without lumps.

Melt the swollen gelatin in any way. You can do this on the stove over low heat. As soon as the gelatin has melted, remove it from the heat without letting it boil. Or in the microwave, in short bursts of 10 seconds. Pour a couple of tablespoons of the curd mixture into the hot gelatin and stir. And only then pour the resulting mixture into the total mass. In this way you will cool the gelatin quickly and without harm to other products.

Mix the curd mass well. Add berries or fruits to it. They can be anything. Cut large fruits into pieces. Stir gently.

Take a dessert pan. It can be anything — glass, ceramic, metal, silicone. Even a regular salad bowl will do. I have a rectangular one, size 20*9cm. Line the pan with cling film. Pour the curd mixture into it. Fold the edges of the film over the top of the dessert. Place it in the refrigerator until completely stabilized, at least 2 hours, preferably overnight.

Remove the finished dessert from the refrigerator and turn it over onto a plate. Remove the film. Serve dessert with fresh berries. You can also top it with any syrup. Bon appetit!
