Recipe instructions

Step 1

Step 1
How to make Japanese mochi cake from rice flour at home in the microwave? Prepare your food. For mochi, it is recommended to use special glutinous rice flour, but this recipe works just fine with regular flour, which is sold in any store. My dyes are gel. For the filling I chose strawberries, blueberries and kiwi. This recipe requires a microwave.

Step 2

Step 2
Get a microwave-safe bowl. Pour water into it, add sugar. Drop a little dye, choose the color to your liking. Stir until the color is uniform.

Step 3

Step 3
Add rice flour to the water and stir until smooth. The dough will have the consistency of pancakes.

Step 4

Step 4
Cover the bowl with cling film and place in the microwave. I cooked the dough for 2 minutes at 750 W. Time and power are approximate. Focus on the operating features of your microwave. You can read more about this in a separate article, the link is at the end of the recipe.

Step 5

Step 5
The dough should thicken, it will look like plasticine. If during this time the dough remains liquid, then put it in the microwave for another 15-30 seconds.

Step 6

Step 6
Cool the dough until warm. Divide it into the same number of parts. This recipe makes 6 cakes. Since Iʼm making three colors, I divide each one into 2 parts. Roll a piece of dough into a log, knead it a little on a board sprinkled with cornstarch. Then roll out into a circle, a few millimeters thick. Don’t make it very thick, as this will make the mochi difficult to seal.

Step 7

Step 7
Place a little curd cheese in the center of the workpiece, on top of it a berry, previously washed and peeled. Smaller strawberries are better; cut large berries into pieces.

Step 8

Step 8
Form the mochi into a round shape and roll in starch.

Step 9

Step 9
I prepared mochi in other colors in a similar manner. One had kiwi cut into pieces as a filling.

Step 10

Step 10
And a large blueberry. You can put a couple of small ones.

Step 11

Step 11
Place the finished cakes in the refrigerator for a couple of hours. During this time, their texture will stabilize, thicken, and the cakes will retain their shape.

Step 12

Step 12
Serve mochi dessert to the table. Bon appetit!
