Strawberry Gelatin Clouds Dessert

Light and airy dessert just melts in your mouth! This dessert is simply irresistible. The name speaks for itself, these pieces are simply weightless like a cloud. The taste is somewhat reminiscent of marshmallows, but much softer! These clouds can be used as an independent dessert, but you can also fill baskets with this soufflé or make a cake with it! Ingredients (5 portions)

Basic:

Lemon juice (or to taste) 3 tbsp
Powdered sugar (+2 tbsp. for sprinkling) 150 g
Gelatin 15 g
Strawberry 200 g

Combine strawberries, lemon juice and powdered sugar.

Grind into a smooth puree.

Pour the strawberry puree into a saucepan and add gelatin. Stir and leave for 5 minutes. After 5 minutes, put the puree on the fire, heat (do not boil) and, with constant stirring, bring until the gelatin is completely dissolved.

Strain the gelatin mass into a large bowl! Let cool to room temperature. While the mixture is cooling, prepare a mold (I use 22x22), line the mold with baking paper, lightly grease it with vegetable oil.

Beat the cooled puree with a mixer until soft peaks form (about 6-10 minutes depending on the power of the mixer). As you beat, the mixture will turn white and increase in volume!

Pour the mixture into the mold and level the surface. We act quickly, the mixture begins to set very quickly and it becomes very difficult to level. Leave at room temperature for 10-24 hours without covering anything until completely hardened.

Sprinkle the work surface with an even layer of powdered sugar, place the clouds on it and, using molds or a sharp knife, cut into portions. Roll each piece in powdered sugar (optional).
