Delicious Homemade Ice Cream with Childhood Flavor

Delicate ice cream with the taste of childhood, you can’t tear yourself away! I love ice cream very much, so I make it all year round. Today I want to share a very tender and delicious homemade ice cream. The original recipe used 33% fat cream, but since Iʼm not a big fan of full-fat ice cream, I used 15% cream and the ice cream turned out very tasty, so go by your taste.

Ingredients (3 portions)

Basic:

Sugar 90 g
Milk 300 ml
Corn starch 10 g
Cream (I used 15%) 150 ml
Vanilla sugar 1 tsp
Powdered milk 35 g

To prepare ice cream, take milk, cream (from 15 to 33% according to your taste), milk powder, regular and vanilla sugar, as well as corn starch (it’s not in the photo, I forgot to post it).

In a saucepan, mix milk powder, sugar and vanilla sugar.

From the total amount of milk we pour 50 ml, with this milk we will dilute the starch. Pour the remaining milk and cream into the dry mixture, mix thoroughly and heat the mixture to a boil.

We dilute the starch with milk and pour it into the boiled milk mixture. Cook until thickened. The mixture will not thicken much, it will seem to become denser.

Pour the resulting cream into a container suitable for freezing and let it cool completely. Place the cooled mixture in the freezer and freeze. During the first hour and a half, every 20-30 minutes, take out the ice cream and mix thoroughly so that ice crystals do not form.

Before serving, let the ice cream sit at room temperature for 10-15 minutes and form into balls. Bon appetit!
