Ingredients (4 portions)

Basic:

Sugar 1 cup
Walnuts 1 cup
Carrot 4 pc
coconut flakes 150 g
Cookie (1.5 cups ground cookies) 100 g

Grate the carrots on a coarse grater, you should get 3 cups. Place the grated carrots in a dry frying pan.

Add sugar to carrots.

Mix everything and leave to simmer over medium heat until all the juice has evaporated.

Remove the stewed carrots from the heat and transfer to a bowl.

Add crushed cookies and walnuts to the carrots. Mix everything thoroughly and put it in the refrigerator.

Sprinkle shredded coconut onto cling film.

Wet your hands with water and, pressing tightly, place the frozen carrots on the coconut flakes.

Next, roll the carrots and coconut flakes and put them in the refrigerator for 1 hour.
