Water 80 ml
Vanillin to taste
Gelatin 7 g
Egg whites 1 pc
Powdered milk (low fat, for sprinkling) 1.5 tbsp
Sweetener to taste

Soak gelatin in water for 20-25 minutes.

Heat the swollen gelatin over low heat until dissolved (do not boil). Or you can dissolve it in a water bath. Add sweetener and vanillin, mix.

Beat the chilled egg whites with a mixer into a stiff foam.

Gradually add the whipped whites, spoonful at a time, into the gelatin mass while whisking continuously. Beat for 2-3 minutes.

The result is a gelatinous mass. Quickly transfer it to parchment paper sprinkled with dry milk. Form a tall rectangle. We also sprinkle dry milk on top through a sieve. Place the future marshmallows in the refrigerator for 1-1.5 hours.
