Heavy cream (33%) 500 ml

Recipe instructions

Step 1

Step 1
How to make homemade ice cream from cream? Prepare your food. Pay special attention to the choice of cream — buy a natural, high-quality product, without vegetable fats, minimum 33% fat content. The taste of the finished ice cream will depend on this. Chill them well before cooking. I prepared half a portion.

Step 2

Step 2
Take a saucepan or pan with a thick bottom — this is important so that the food does not burn during cooking. Pour the egg yolks into it, add powdered sugar, add vanillin (or vanilla sugar). Mix the products well until smooth.

Step 3

Step 3
Pour milk into the yolk mixture in portions, stirring well after each addition.

Step 4

Step 4
Boil the mixture over medium heat with constant stirring until thickened. Do not bring it to a boil, otherwise the yolks may curdle. The result should be a thick, homogeneous cream, very tasty, by the way. Cool it completely.

Step 5

Step 5
Pour cold cream into a deep bowl. Start beating them at low mixer speeds, gradually increasing the speed. Whip the cream until stiff peaks form.

Step 6

Step 6
Pour the completely cooled yolk cream into the cream.

Step 7

Step 7
Stir the cream into the cream. The result will be a homogeneous, rather liquid mass, very similar to the taste of melted ice cream.

Step 8

Step 8
Place it in a container with a lid and put it in the freezer for at least 8 hours. Every 2 hours, take out the ice cream and stir with a spoon — this will prevent the formation of ice crystals. Serve the finished ice cream with berries, nuts or chocolate. Bon appetit!
