Also prepare wooden sticks on which you will place the lollipops. Wooden skewers work well for this purpose. If they are too long, cut them in half. Prepare the paper on which the caramel will dry. A Teflon mat is best. If you don’t have it, take regular parchment and grease it well with odorless vegetable oil. I also used confectionery sprinkles for decoration.

Take a saucepan with a thick bottom. Put sugar in it, pour water and lemon juice. Stir.

Place the saucepan on the fire. Stirring with a spatula, wait until the sugar is completely dissolved.

When the water boils further, you can stop stirring constantly. Continue cooking over moderate heat. Have a container of cold water ready nearby; you will need it instead of a thermometer.

Let the caramel cook for a bit; it will boil vigorously and turn slightly yellow. This will be a signal to make a test. To do this, dip a wooden stick into the boiling syrup for a second, remove it and immediately plunge it into cold water. After dipping the stick into the water, quickly swirl it in the water to cool the caramel.

Take out the stick and touch the caramel that has stuck to it. if it is soft and easy to flatten, then you need to cook it further. If the caramel becomes hard after water, then it is ready. Mine is still a little plastic in this photo. I continue to cook.

Now you can see from the color that the caramel should be ready. A test with water gave a positive result — the ball of caramel on the stick became hard almost immediately. Turn off the heat.

Using a spoon, pour the caramel into equal circles onto the mat or paper. Be careful the caramel is hot and can easily get burned!
